This is a non-heading type of cabbage; Pak Choy is crisp tender Chinese cabbage often used in Asian dishes for it's wonderful flavor. It is hardy when growing in the cold. You can either harvest the entire plant or use outer leaves and keep using the plant longer since it will keep on producing! The leaves will grow anywhere from 7 to 10 inches long.

How to Save Seeds

Separate Pak Choy from other plants in the Brassica Rapa family such as Turnips. Plants are biennial so will require overwintering with mulch or trim leaves to 2 inches above the bulb and store them in a root cellar in either damp sawdust or sand. Replant in spring and wait for them to flower; when pods dry out they are ready.
