Pak Choi, also known as Bok Choy or Chinese Cabbage, is a versatile heirloom Asian green prized for its tender leaves, crisp stalks, and mild slightly peppery flavor. This fast-growing cool-season vegetable has long been a staple ingredient in Asian cuisine and is now popular worldwide for its excellent flavor, nutrition, and ease of growing.

The smooth dark green leaves and crunchy white stems are excellent for stir-fries, soups, salads, steaming, sautéing, and noodle dishes. Pak Choi absorbs flavors beautifully and pairs especially well with garlic, ginger, soy sauce, sesame oil, and savory broths.

This productive leafy vegetable grows best in cooler weather with fertile well-drained soil and regular moisture. Pak Choi matures quickly and can be harvested young for baby greens or allowed to reach full size for larger heads and stalks.

Highly nutritious and easy to cultivate, Pak Choi is an excellent choice for kitchen gardens, raised beds, homesteads, and market growers seeking flavorful leafy greens with outstanding versatility.

How to Save Seeds

Pak Choi belongs to the Brassica rapa species and will cross-pollinate with other members of the same species. Separate different Brassica rapa varieties by at least 1 mile to maintain seed purity.

Plants intended for seed production require overwintering. In milder climates, heavily mulch the plants throughout winter. In colder regions, carefully transplant plants into containers of damp sand and store them in a cool location between 35°F and 40°F.

Once spring arrives, return the plants to the garden and allow them to bolt naturally. Flower stalks will develop followed by seed pods.

Allow the seed pods to fully mature and dry on the plant before harvesting. Once dry, collect the pods, remove the seeds, and store them in labeled envelopes or airtight containers in a cool dry place for future planting.
