This heirloom variety of parsnip was developed in the early 1800s and is still grown today because of its delicious flavor. Hollow Crown Parsnips are best harvested in the late fall after they've been exposed to a few hard frosts. The roots are sweet and long and are perfect for soups, stews, and roasting. When you roast these parsnips, they develop a delicious nutty flavor that is a surefire crowd-pleaser.

 How to Save Seeds

Parsnip will cross pollinate so keep varieties separate by 500ft. Allow the parsnip plant to fully mature and go to seed. This will usually happen in the second year of growth. Once the seed heads have turned brown and dry, cut them off and place them in a paper bag. Be sure to label the bag with the date and type of plant. Shake the bag to release the seeds from the seed heads. Discard any debris or chaff. Store the seeds in a cool, dry place until you are ready to plant them. Be sure to label the container with the date and type of plant.
