A wonderful garden green, perfect substitute for lettuce, it has a spicy pepper like flavor very similar to mustard greens. Arugula is very tolerant of dry conditions and prefers cooler weather so it can be grown in early spring or fall. Delicious and very nutritious it contains over 27% vitamin K and other nutrients as well. Apparently bugs don't prefer it.

How to Save Seeds 

Saving arugula seeds is a simple process that allows you to grow your own arugula plants in future. To start, leave a few arugula plants in your garden to flower and set seed. The flowers will eventually turn into seed pods that will dry out and turn brown. Once the majority of the seed pods have turned brown and are dry to the touch, it’s time to harvest the seeds. Cut off the seed heads and place them into a paper bag. Label the bag with the date and name of the plant. Leave the bag in a cool, dry place for a week or two to allow the seeds to fully dry out. Once the seeds are dry, pour them into a container and store in a cool, dry place until you’re ready to plant them. With proper storage, arugula seeds can last up to five years.
