Golden Acre cabbage, a popular heirloom vegetable, belongs to the Brassicaceae family; it is highly valued for its compact, sea green round heads and tender leaves. This cabbage variety is well suited for both home gardening and commercial cultivation due to its relatively small size, making it easy to manage and harvest. The savory heads typically weigh around 3 to 5 pounds and mature in about 65 to 75 days after transplanting.

Golden Acre cabbage thrives best in full sun; it requires well drained, fertile soil with a pH ranging between 6.0 and 7.5. Consistent moisture is crucial for optimal growth; therefore, regular watering is necessary to keep the soil evenly moist but not waterlogged. This cabbage variety is also known for its disease resistance, particularly against fusarium wilt, making it a reliable choice for gardeners.

In culinary uses, Golden Acre cabbage is versatile; it can be used in salads, coleslaw, soups, and stir fries. Its mild flavor and crisp texture make it a favorite for fresh eating, although it can also be fermented to make sauerkraut. To ensure the best quality, harvest the cabbage heads when they are firm and fully developed; this will provide the most flavorful and nutritious produce for your kitchen.

How to Save Seeds

Cabbage will cross pollinate with any member of the Brassica oleracea which includes cauliflower, broccoli, kale, and brussel sprouts so separate by 1 mile . They also require overwintering for seed. So you'll want to preserve the head when overwintering by either heavily mulching the plant or if you have colder winters transplant the plant from the garden to a pot of sand and store over winter in an area between 35 to 40 degrees. Once spring arrives simply place the plant back out into the garden and allow to bolt. Once pods appear and dry out harvest and store seeds.
