Arugula is a flavorful leafy green prized for its bold peppery taste and exceptional nutritional value. Often used as a substitute for lettuce in salads and sandwiches, arugula adds a pleasant spicy kick similar to mustard greens while remaining tender and refreshing.
This fast-growing cool-season green thrives in early spring and fall gardens where cooler temperatures help maintain its mild spicy flavor. Arugula is highly tolerant of dry conditions and is known for being relatively resistant to insect pressure compared to many other salad greens.
The tender leaves are excellent fresh in salads, sandwiches, wraps, pizzas, pasta dishes, and sautés. Its distinctive flavor pairs wonderfully with olive oil, lemon, cheeses, roasted vegetables, and grilled meats.
Rich in vitamins and minerals, arugula is especially valued for its high Vitamin K content along with many other beneficial nutrients, making it both a delicious and nutritious addition to the garden.

How to Save Seeds
Saving arugula seeds is a simple process that allows gardeners to preserve plants for future growing seasons.
Allow several healthy plants to remain in the garden long enough to flower and produce seed pods. As the season progresses, the seed pods will begin to dry and turn brown.
Once most of the seed pods are brown and dry to the touch, cut the seed stalks and place them into a paper bag labeled with the variety name and harvest date.
Store the bag in a cool dry location for one to two weeks to allow the seeds to fully cure and dry.
After drying, separate the seeds from the pods and store them in airtight containers or labeled envelopes in a cool dry place away from direct sunlight. Properly stored arugula seeds can remain viable for up to five years.
