Catskills Brussels Sprouts are a dependable heirloom variety prized for their compact stalks, vibrant green sprouts, and excellent cool weather performance. Originally associated with the cool growing regions of the Catskill Mountains, this variety produces flavorful sprouts with a slightly sweet and nutty taste that improves after exposure to frost.
These productive plants develop sturdy stalks loaded with tight uniform sprouts that are perfect for roasting, steaming, sautéing, soups, casseroles, and fresh garden cooking. Cool temperatures help improve flavor and tenderness, making this variety especially desirable for fall and winter harvests.
Catskills Brussels Sprouts thrive in fertile well-drained soil with full sun and consistent moisture. Their cold hardiness and reliable production make them an excellent choice for home gardens, homesteads, and market growers seeking a traditional heirloom brassica.

How to Save Seeds
Brussels sprouts will readily cross pollinate with other members of the Brassica oleracea family including broccoli, cabbage, cauliflower, and kale, so separate varieties by at least 1 mile for maintaining seed purity.
Brussels sprouts are biennial plants and require overwintering before producing seeds. Leave healthy plants in the garden throughout winter and mulch heavily in colder climates to protect the stalks.
During the second growing season the plants will send up tall flower stalks followed by seed pods. Allow the pods to mature and dry naturally on the plant before harvesting.
Harvest the seed pods before they begin splitting open naturally. Finish drying indoors if necessary, then remove the seeds from the pods and store them in a cool dry place inside labeled envelopes or airtight containers for future planting.
