Caraway is a timeless culinary herb celebrated for its warm aromatic flavor and centuries of use throughout European and Middle Eastern cuisine. Known for its slender crescent-shaped seeds and distinctive earthy aroma, caraway adds remarkable depth and character to both savory and sweet dishes.

Its flavor combines warm peppery notes with subtle hints of citrus and anise, making it a favorite ingredient in rye breads, soups, stews, roasted vegetables, sausages, cheeses, pastries, and pickled dishes. The seeds are highly aromatic and release even more flavor when lightly toasted before use.

Beyond the kitchen, caraway has long been appreciated for its traditional digestive benefits and medicinal uses. The attractive fern-like foliage and delicate flower umbels also make it a beautiful addition to herb gardens and pollinator-friendly plantings.

Easy to grow and highly rewarding, Caraway is an exceptional herb for gardeners seeking rich flavor, culinary versatility, and classic old-world charm.

How to Grow

Choose a sunny location that receives at least 6 hours of direct sunlight each day. Caraway grows best in rich well-draining soil amended with compost or aged manure.

Sow seeds directly into the garden in early spring or late summer. Scatter seeds over the soil surface and cover lightly with soil. Keep the soil consistently moist during germination.

Once seedlings are a few inches tall, thin them to approximately 6-12 inches apart to provide adequate room for healthy growth.

Water regularly during dry periods and fertilize every 4-6 weeks throughout the growing season using a balanced fertilizer.

Caraway plants typically produce seeds during their second growing season. Harvest seed heads once they turn brown and dry on the plant. Cut the seed heads and hang them upside down in a dry well-ventilated location until fully dry. Remove seeds and store in an airtight container for future use.
