Green Curled Endive is a beautiful and flavorful leafy green prized for its finely curled leaves, crisp texture, and pleasantly sweet yet slightly nutty flavor. This cool-season vegetable adds elegance and texture to salads while also being highly adaptable and easy to grow in a wide range of climates.

Its deeply curled bright green foliage creates attractive full heads that are both ornamental and highly productive in the garden. Green Curled Endive is especially valued for its cold hardiness and ability to tolerate damp conditions better than many leafy greens.

This versatile green is commonly used fresh in salads, mixed greens, garnishes, and gourmet dishes. Gardeners can also blanch the center leaves to create a more tender texture and a pleasantly stronger bittersweet flavor. Blanching is easily done by tying the outer leaves together for several days to shade the center growth.

With relatively low pest problems and dependable performance, Green Curled Endive is an excellent choice for home gardeners, market growers, raised beds, and cool-season gardens.

How to Save Seeds

Endive can cross-pollinate with other endive varieties, so separate different varieties by at least 500 feet to help maintain seed purity.

Allow healthy plants to remain in the garden until they flower and produce seed heads. Seed heads are ready for harvest once they become brown and completely dry on the plant.

Harvest mature seed heads by cutting them from the plant and placing them into a paper bag. Label the bag with the variety name and harvest date for future reference.

Once fully dry, gently crush or rub the seed heads between your hands to separate the seeds from the chaff and plant debris.

Clean the seeds thoroughly and allow them to dry completely before storage. Store finished seeds in paper envelopes or airtight glass containers in a cool, dry, dark location away from moisture and direct sunlight.

Properly stored endive seeds can remain viable for several growing seasons and provide dependable future harvests.
