Catalogna Emerald Endive is a beautiful heirloom chicory variety prized for its tender dark green leaves, crisp white stems, and pleasantly mild flavor. Similar in appearance to dandelion greens but far more tender and refined, this elegant leafy green is a favorite for salads, soups, stir-fries, and fresh garden harvests.

This striking variety produces upright clusters of long, narrow leaves with rich emerald coloring and bright contrasting stems that add beauty and texture to both the garden and the kitchen. Its mild flavor makes it an excellent choice for gardeners who enjoy leafy greens without the stronger bitterness often associated with wild chicories or dandelions.

Catalogna Emerald Endive thrives in cooler weather and performs exceptionally well in spring and fall gardens. The plants are productive, easy to grow, and highly versatile in culinary use, whether harvested young for salads or mature for cooked dishes.

With its attractive appearance, tender texture, and dependable garden performance, Catalogna Emerald Endive is an excellent addition to raised beds, market gardens, homesteads, and cool-season vegetable gardens.

How to Save Seeds

Endive varieties can cross-pollinate with one another, so separate different endive types by at least 500 feet to help maintain seed purity.

Allow healthy plants to remain in the garden until they flower and produce seed heads. Seed heads are ready for harvest once they become fully brown and dry on the plant.

Harvest mature seed heads by cutting them from the plant and placing them into a labeled paper bag. Be sure to include the variety name and harvest date for future reference.

Once completely dry, gently rub or crush the seed heads to separate the seeds from the surrounding chaff and plant material.

Clean the seeds thoroughly and allow them to dry fully before storage. Store finished seeds in paper envelopes or airtight containers in a cool, dry, dark location away from moisture and sunlight.

Properly stored seeds will remain viable for future planting seasons and continue producing reliable harvests year after year.
