How to Save Seeds
Lettuce is primarily self-pollinating, making seed saving relatively easy. Different lettuce varieties should be separated by approximately 50 feet to maintain pure seed stock.
For overwintering seed crops, lettuce plants should be approximately 2 inches tall when cold weather arrives. Timing will vary depending on your growing region and climate conditions.
Protect plants through winter by applying a heavy layer of mulch. The following season, plants will begin to bolt and send up tall flowering stalks reaching 4 to 5 feet high.
Once lettuce bolts, the leaves become bitter and are no longer ideal for eating. Flowers will gradually open over several weeks, followed by seed development.
Watch for mature feathery seeds forming on the flower heads. Once seeds begin loosening naturally, collect them by gently shaking the stalks over a paper bag.
Allow collected seeds to dry thoroughly before storing them in a cool dry place for future planting seasons.
