Cubanelle Pepper, also known as the Sweet Italian Frying Pepper, is a classic heirloom variety treasured for its mild sweet flavor, thin tender walls, and excellent versatility in the kitchen. These elongated peppers range from light green to yellow and eventually ripen to beautiful shades of orange and red.

Cubanelle peppers are especially popular in Italian, Spanish, and Mediterranean cuisine where they are commonly fried, roasted, stuffed, grilled, or added fresh to salads and sandwiches. Their tender texture and mild heat make them perfect for family meals and fresh garden cooking. Even after cooking, the peppers maintain a pleasant texture and rich sweet flavor.

This productive heirloom variety performs very well in warm climates and produces abundant harvests throughout the growing season. Excellent for home gardens, homesteads, market gardens, and fresh culinary use.

How to Save Seeds

Peppers are primarily self-pollinating but can still cross pollinate with other peppers of the same species. For maintaining seed purity, separate different pepper varieties by at least 500 feet.

Allow peppers to fully ripen and mature on the plant until they begin to dry naturally. Mature fruits will develop deeper coloration and fully formed seeds.

Harvest the mature peppers, cut them open carefully, and scoop out the seeds from the center cavity.

Spread the seeds out on paper towels or fine mesh screens and allow them to dry thoroughly for about one week in a warm dry location with good airflow.

Once completely dry, store seeds in labeled envelopes or airtight containers in a cool dry location until ready for future planting.
