Pak choi, also known as bok choy or Chinese cabbage, is a versatile leafy green vegetable popular in Asian cuisine. It grows well in cool weather with well-drained soil and consistent moisture. Ready for harvest in 45-60 days, it can be used in stir-fries, soups, salads, and more. Pak choi's tender leaves and crunchy stalks offer a variety of culinary uses, from sautéing to stir-frying, making it a favorite ingredient for chefs and home cooks. Its mild, slightly peppery flavor pairs well with a range of ingredients, enhancing the taste of both simple and complex dishes.

In the kitchen, pak choi can be prepared in numerous ways. For a quick and healthy side dish, try steaming or blanching the leaves and stalks, then drizzling them with a bit of sesame oil and soy sauce. For a heartier meal, add pak choi to a noodle soup or stir-fry it with garlic, ginger, and a splash of oyster sauce for a savory delight.

Experimenting with pak choi can lead to delightful culinary discoveries. Whether you're enjoying it in a traditional Asian recipe or incorporating it into a new fusion dish, pak choi is sure to bring both flavor and nutrition to your table.

How to Save Seeds

Cabbage will cross pollinate with any member of the Brassica rapa so separate by 1 mile from other Brassica rapa. They also require overwintering for seed. So you'll want to preserve the head when overwintering by either heavily mulching the plant or if you have colder winters transplant the plant from the garden to a pot of sand and store over winter in an area between 35 to 40 degrees. Once spring arrives simply place the plant back out into the garden and allow to bolt. Once pods appear and dry out harvest and store seeds.
