Red Burgundy Okra is a unique and vibrant variety of okra that stands out not only for its striking color but also for its culinary versatility and nutritional benefits. This heirloom variety, developed by Leon Robbins at Clemson University in 1983, boasts deep red pods that can grow up to 6 to 8 inches in length. The plant itself is quite ornamental, with red stems and green leaves veined with red, making it a beautiful addition to any garden. The pods retain their color when cooked, adding a visual appeal to dishes.
In the kitchen, Red Burgundy Okra can be used in a variety of ways. It can be fried, pickled, grilled, or added to soups and stews. Its mild flavor and tender texture make it a favorite in Southern cuisine, particularly in dishes like gumbo and jambalaya. When picking okra, it's best to harvest the pods when they are about 3 to 4 inches long for the best tenderness and flavor. The vibrant color not only enhances the visual appeal of the dishes but also signifies the presence of anthocyanins, which are powerful antioxidants.

How to Save Seeds
Usually self pollinating however can occur within less than 1 mile. So proceed with caution on planting more than one variety. Let pods harden on stalk; they will become woody and then seeds are ready. Simply take them off pod and crack open for getting seeds out for saving.
