How to Save Seeds
Celery will readily cross pollinate with other celery and celeriac family varieties, so separate different varieties by at least 1 mile for seed purity.
To overwinter celery for seed production, cut the plant down to a short stump and mulch heavily through winter. Remove the mulch in spring as temperatures begin to warm and new growth resumes.
During the second growing season the plants will send up flower stalks and eventually produce seed heads. Allow the seed heads to fully mature and dry completely on the plant before harvesting.
Once dry, cut the seed heads and store them in a cool dry place. Separate the seeds from the dried flower heads and store them in labeled envelopes or airtight containers until ready for future planting.
