Anaheim Chili Pepper is a classic heirloom pepper variety prized for its mild heat, excellent flavor, and incredible versatility in the kitchen. Named after Anaheim, California where it became widely cultivated, this popular chili actually traces its origins back to central Mexico and is also commonly associated with New Mexico-style peppers.
These large elongated peppers are typically harvested while still green, though they will mature to a rich red color if left on the plant longer. Anaheim peppers provide just enough heat to add flavor and warmth to dishes without overpowering other ingredients, making them ideal for a wide variety of recipes.
Anaheim Chili plants are vigorous producers that perform exceptionally well in warm sunny gardens. The peppers are excellent for roasting, stuffing, grilling, drying, salsas, soups, and fresh cooking. Their mild spice level makes them a favorite for both home cooks and gardeners seeking flavorful but approachable chili peppers.
Easy to grow and highly productive, Anaheim Chili Peppers are a dependable addition to vegetable gardens, raised beds, homesteads, and market gardens.

How to Save Seeds
Peppers are primarily self-pollinating plants, though they can cross-pollinate with other pepper varieties within the same species. To maintain seed purity, separate varieties by at least 500 feet whenever possible.
Allow peppers selected for seed saving to fully ripen and mature on the plant until they begin drying naturally.
Harvest mature peppers and carefully cut them open to remove the seeds from the interior.
Spread seeds out in a warm, dry, well-ventilated location and allow them to dry thoroughly for at least one week before storage.
Once completely dry, store seeds in a cool, dark, dry place using airtight containers, envelopes, or glass jars for long-term preservation.
Properly stored Anaheim Chili Pepper seeds can remain viable for several years and continue producing flavorful harvests season after season.
