How to Save Seeds

Carrots readily cross-pollinate with other carrot varieties as well as Queen Anne's Lace, a common wild relative found in many regions. To maintain varietal purity, separate seed-producing carrots from other carrot varieties and Queen Anne's Lace by at least one-quarter mile whenever possible.

Because carrots are biennial plants, they must overwinter before producing seed. In mild climates, roots can remain in the ground with a protective layer of mulch. In colder regions, roots may be lifted and stored in cool, moist conditions until spring.

During the second growing season, plants will produce tall flower stalks topped with umbrella-shaped flower clusters known as umbels. Allow the umbels to mature fully and dry naturally on the plant before harvesting.

Once the seed heads have turned brown and completely dried, harvest them and remove the seeds. Store the fully dried seeds in a cool, dry location for future planting.
