How to Save Ebony King Eggplant Seeds

Ebony King Eggplant is primarily self-pollinating, but cross-pollination between eggplant varieties can still occur. To maintain seed purity, separate different eggplant varieties by approximately 1/4 mile when saving seeds.

Allow fruits to fully mature on the plant while keeping them off the ground whenever possible. Mature eggplants intended for seed saving will change color from deep purple to yellowish-brown as they fully ripen.

Once mature, cut open the fruit and scoop the seeds into a bowl of water. Viable seeds will sink to the bottom while immature or poor-quality seeds typically float. Remove the good seeds and spread them out on a screen, paper towel, or drying rack in a well-ventilated area. Allow the seeds to dry thoroughly before storing them in a cool, dry place for future planting seasons.
